Many recipes for baby back ribs involve dry rubs but Carson's thinks their sauce is so good that their sauce is all is needed for the perfect rack of ribs. Heat up your smoker to 225-250 degrees and set it up for indirect cooking if you have the choice, you can do this in the oven too I suppose but it just won't be the same. When your temperature is stable place a handful of hickory chips on the coals and let the initial billowing smoke calm down to avoid having a bitter taste. In the meantime, remove the membrane from the back bone side of the baby backs and douse them with a good coating of Carson's Famous Signature BBQ Rib Sauce. When the hickory is producing a wispy smoke, its time to get your rack on the grate. After four to five hours you'll start seeing the meat pull back from the bones and if you can twist the bone freely, they're ready to eat.
